1 cup sliced purple sliced cabbage

1 cup sliced green sliced cabbage

1 cup grated carrots (large grate)

1/4 cup thin sliced red onions

1/4 cup mayo

Juice if half lemon
- Salt and pepper to taste

1 teaspoon ground mustard
- 3/4 teaspoon fine sea salt

1/4 teaspoon black pepper

1 package Organic Prairie® Pork Chops

2 teaspoons raw honey
-
1 to 2 tablespoons extra virgin olive oil

Directions
- To make the slaw: in a large bowl, add the purple cabbage, green cabbage, carrots, red onion, mayo, and lemon juice. Stir to combine completely. Add salt and pepper to taste.
To make the pork chops: Allow pork chops to come to room temperature. In a small dish, add the ground mustard, salt and pepper and mix together.
- Pat dry pork chops. Add 1/2 teaspoon of honey onto each side and rub in. Sprinkle each side with the ground mustard seasoning.
- In a large skillet over medium heat. Add the olive oil to coat the pan. Cook pork chops about 3 minutes per side until golden brown and internal temperature is 145°F. Let rest for 3 minutes before serving.
- Serve pork chops with coleslaw.
