This Roasted Garlic Chuck Roast is a comforting and hearty meal that combines the well marbled robust flavor of chuck roast and the deep, savory allure of roasted garlic. This simple roast is an easy dinner that compliments potatoes, vegetables, or salads.
Ingredients

1 Organic Prairie® Chuck Roast (2 pounds)

Extra virgin olive oil
- Fine sea salt

Black pepper

2 teaspoons minced garlic
Directions
- Pat dry Chuck roast and allow to come to room temperature.
- Preheat the oven to 325°F.
- Brush olive oil on one side of the Chuck roast and generously salt and pepper that side.
- In a large cast iron skillet over high heat, place the Chuck roast olive oil side down. Salt and pepper the other side of the Chuck roast. Sear each side until golden brown, about 4 minutes per side.
- Smear the minced garlic on the top side of the Chuck roast and transfer to the oven.
- Bake for 30 to 40 minutes, or until the internal temperature is 130°F to 140°F for medium rare.
- Serve with green beans, mashed potatoes, or salad.
