Pepperoni Panini

When you're looking for a quick and easy lunch, this Pepperoni Panini is an easy grilled sandwich with Organic Valley® Mozzarella, Organic Valley® Pepperoni, and fresh basil. There is nothing more simple and delicious!
Ingredients
2 slices sourdough bread
2 tablespoons Organic Valley® Salted Butter
4 ounces Organic Valley® Mozzarella

12 slices Organic Valley® Pepperoni
fresh basil, chopped
Directions
Butter each slice of bread on one side only, set aside.
Grate the mozzarella, set aside.
Assemble the sandwich by putting the butter side down, add half the grated mozzarella, pepperoni slices, fresh basil, and the remaining cheese. Top with second slice of bread, butter side up so butter sides are on the outside of the sandwich.
Add the sandwich to a panini press and grill until cheese is melted. Alternatively, if you don’t have a panini press, you cook this over low/medium heat in a large skillet or grill skillet, flipping sandwich once it’s golden brown on each side.
