Whole beef tenderloin makes a special centerpiece for any holiday gathering, and it’s even better when you know it’s from family farms!! Our pasture-raised, organic, whole beef tenderloin is here for a limited time & available in limited quantities. Serves 6-8 (based on 8oz/person).

Beef tenderloin is fork-tender, though its natural leanness also means it benefits from generous seasoning. For a whole roast, once thawed -  trim any remaining fat or silverskin, and using butcher’s twine, tuck the tapered end of the roast and tie, to produce a uniform size for an even cook. 

Pat the roast dry and season generously with salt and pepper. Allow the roast to rest in the fridge uncovered for up to 24 hours prior to cooking. This process helps to pull moisture out, drawing the seasoning in. and tries the surface - resulting in better browning and a crust upon roasting. 

Remove the roast from the refrigerator and allow it to rest at room temperature for 1-2 hours prior to cooking. 

Roast at 400 degrees for 20 minutes. Remove from the oven and season with your favorite herbal combination. For a classic herbal paste - process ¾ cup parmesan cheese, ¼ cup olive oil, ⅓ cup fresh parsley, 2 tablespoons fresh thyme and 4 cloves of garlic in a food processor.  Spread onto the roast, and continue cooking until the roast reaches medium rare (125 degrees), approximately 20 minutes. Roast temperature will rise an additional 5-10 degrees upon removing from the oven. 

Allow the roast to rest for 20 minutes before slicing. 

Serve with horseradish cream sauce. Prepare cream sauce up to 24 hours in advance by mixing ½ cup sour cream, ½ cup heavy whipping cream, ¼ cup drained horseradish, 1 garlic clove and 2 teaspoons of Dijon mustard. Season to taste with salt & pepper.

Our pasture-raised, organic whole beef tenderloin is flash frozen, and vacuum sealed. Arrives frozen, on dry ice, in eco-friendly insulation, made from recycled denim. Allow to thaw 48-72  hours in the refrigerator prior to cooking
